Colorful Cauliflower Pomegranate Salad Special Holiday Recipe

If you are looking to bring a side dish or a salad to your hostess for Rosh Shanna, this is the perfect salad for you. Pomegranate is o of the seven spices of Israel, and just as the fruits are full of seeds, we hope we’ll be similarly full of merits in the coming year.

This dish is SO easy to prep, less than 10 minutes work and you have an impressive, delicious dish for the holiday table!
If you are looking to bring a gluten-free, plant-based/vegan dish with you, we got you covered! This healthy recipe is defiantly my all-time favorite recipe whenever I want to bring something new!
This salad is packed with antioxidants and vitamin c.

Healthy & easy cauliflower salad recipe

1 small white cauliflower
1 small green cauliflower
1 small purple cauliflower
1/2 cup of pomegranate seeds (preferably fresh!)
1/4 row peeled pistachio
Lemon juice from 1 or 1.5 lemons
Parsley leaves for garnish

Home-made fresh Mediterranean sauce:
Lemon juice from half a lemon
1 Tbsp of honey (you can add additional spoon if you prefer a sweeter taste)
3 Tbsp olive oil

Wash your cauliflowers thoroughly (I prefer using hot water to get rid of all small insect that I can’t see yieks!) and drain with a towel
Using a mandolin slicer, cut all three cauliflowers thinly. Be very careful on your fingers when you do so.
Place your thinly sliced cauliflowers in a serving bowl and pour lemon juice and some salt on it (lemon brine). The lemon will pickle the cauliflower.
Heating a nonstick pan slightly roast the pistachios. Set aside.
If you need to deseed the pomegranate, I have a tip for you; First, wear a black shirt (who’s going to wash off those stains?!). Now cut the pomegranate in two pieces and place in front of the large bowel. Using a spoon tap the pomegranate on the peel side, you’ll notice the seeds come out quickly. Once you are ready to serve the salad prepare your dish;
Put all ingredients together and mix well. Taste it. If you like it the way it is, you don’t have to add in the sauce!
Mix the sauce ingredients and pour on the salad.
Add parsley for garnish (or don’t :))
If you are hosting a vegan friend, switch the honey with 100% maple syrup.
If anyone at your table has diabetes, skip the sauce and stir in 2-3 tbsp of extra virgin olive oil, it will be delicious anyway!
