Fresh Sweet Leaves Mix Salad

I love that time of year, the weather is getting cooler (or drops in 45 degrees overnight… Texas weather is crazy! lol) You start to notice everything-pumpkin-spice, pumpkin patches pictures all over social media AND my FAVORITE, Persimmon! Now, when I was a child, that is not a fruit I would even consider trying. I remember a nasty fruit that keeps your mouth so dry that your lips will stick to your teeth. Ugh!
But ever since I moved to the states and I see those beautifully packed persimmons, I just can’t resist it! And guess what? My kids love it! Lucky I introduce them to fruits I don’t necessarily like (clementine, anyone?)
So here is an easy fruity salad recipe for your next gathering or holiday table. Super easy!

A healthy, fresh, and sweet salad to have on hand is always a blessing, right?

Fresh persimmon and spring mix salad


Persimmon Leaves Dinner Salad Recipe:

Ingredients:
One persimmon – thinly sliced
One box of organic spring mix
2 Tbsp of sliced almonds or raw peeled pistachio
Dressing:
1/4 cup of extra virgin olive oil
2 tbsp honey
1- 2 tbsp balsamic vinegar
lemon juice from one lemon
pinch of nutmeg
Salt & pepper to taste

Directions:

Wash thoroughly persimmon & mix leaves, you can use any kind that you like, Kyle and spinach can work very well too.
Pet dry the mix and place the washed mix in a serving bowl.
Thinly slice the persimmon and put aside.
Prepare the dressing and pour over the mixed leaves, let it soak in.
Add the sliced persimmon in and mix gently.
Add in the sliced almonds just right before serving. If you want to add in pistachio (like I did in the picture above), I would highly recommend on a quick roast in a clean pan:
Heat up a none stick pan, and slightly roast the row pistachio until getting a little darker.

Notes:
Optional leaf mix:
Spring mix
Baby spinach with Kyle
Radicchio head with Boston lettuce
Green leaves mix – locally grown
You can sub the persimmon to almost any other hard fruit like apple, peach, nectarine, orange filet and so on.
You can skip the nuts above if there is an allergy or if you don’t like it, but I would add some color in by spreading a little black sesame.
I LOVE using infused balsamic vinegar, my favorite one is fig infused balsamic, you can add it to your next grocery list (can easily be found at Kroger, target, sprouts, etc.)
