This recipe is such a great EASY and super quick option for lunch (or dinner if you may). I have a thing for broccoli.. yes, I know it stinks when you cook it. I know some kids have a broccoli phobia (my son loves it! My daughter wouldn’t touch it – imagine a questioning face here lol.) So now, next time your vegan friend says he’s coming for dinner you don’t need to freak out!
Broccoli is an excellent source of fibers, vitamin K & vitamin C, so make sure you incorporate it into your meal plan.
So with no further due, please welcome this SUPER quick, under than 10 minutes and only three ingredients (excluding seasoning) Broccoli – Tofu Patties:
Yield 34 small patties (about 2.5″)
1 pack of firm tofu
1/3 cup of ground lupin beans (look in the notes for other sub-options)
2 cups of broccoli florets (pre-wahsed)
Using a food processor, grate/shred the broccoli florets into thin “rice”. It doesn’t have to be too small, 30 seconds should be enough (I promised QUICK prep, didn’t I?) and place in a clean bowl. Keep your food processor out, we’re going to use it (and you don’t need to clean it yet)
Drain all tofu liquids as possible (for this recipe, I squeezed it out above my kitchen sink, some recipes require longer drying process). After you drained your tofu, add it to the food processor along with the ground lupin beans. Blend until well mixed, and you have a spread-like batter.
Place your tofu batter with the broccoli, add your favorite spices. I used garlic, onion powder, salt and a little bit spicy seasoning I have from Israel that call Jerusalem mix (You can find it here>>https://www.pereg-gourmet.com/products/mixed-spices-jerusalem)
Place a parchment paper on a cookie tray (or whatever you have at home) and spray with a little avocado oil.
Using a small ice cream scoop, shape your patties and place them on the parchment paper.
Spray your patties with a little avocado oil and place in the oven for 15 minute, then flip your patties and change the oven to the broil program for an additional 5 minutes.
Yep! It’s READY!
You can sub lupin beans with one flaxseed egg (1 ground flaxseeds with 3-4 tablespoon water, set aside until thickened and then add to the mixture) or with two eggs if not vegan.
You can add chopped onion to it, simply chop it with the broccoli and save time 🙂
Optional seasoning to add-in:
- Cayenne pepper for milder heat
- Nutmeg and garlic
- Ginger, garlic powder and parsley
- Smoked paprika and onion powder
