Morning Delight Your Kids Will Love [Kosher for Passover, Clean-eating & Gluten-Free]

I was looking to vary our breakfast options now that we are on lockdown (or shelter in place if you want to use the right and actual term…), and I came up with my own version to the Cookie & Kate’s blueberry baked oat. As a vegetarian mom, I struggle with my protein intake so this high protein breakfast idea would ensure I’m having enough protein for breakfast! And if you are Jewish like me, you can even bake it during Passover (or any other day πŸ˜‚πŸ€—)

It is moist, satisfying delicious breakfast or even as a snack. Great idea for a busy parent as prep is less than 15 minutes! So here is my easy, one bowl, breakfast baked oat you and your e kids will love:

Moist apple baked oat packed with protein. A perfect and easy way to start your morning right!

Ingredients:

Heat your oven to 355 F, grease a 9Γ—9 baking pan or 6 muffin tins. Yield 6 servings (or dozen in case you want a snack size)

3/4 cup rolled oat (gluten-free certificate if necessary)

1 pack firm tofu

1 cup nut milk of your choice

1 tsp vanilla extract

1 tbsp ground cinnamon (or more to taste)

2 Medjool dates pitted and chopped

2 grated apples, you can use unsweetened applesauce if you like

2 large cage-free/pasture-raised eggs

3 tbsp pure maple syrup

A pinch of salt

Directions:

Pet the tofu and squeeze all the water out. Don’t worry about smashing it, we’ll do it anyway 😊, place in a bowl. Using a potato masher, mash the tofu until tofu crumbs appear. Add in the dates, grated apple/applesauce, cinnamon 2 tbsp of maple and a dash of salt, taste! If you need the additional tbsp of maple syrup, add it now. Mix in all other ingredients (oat, eggs, nut milk, etc.) and stir until well combined.

Place a parchment paper in a 9Γ—9 baking pan and pour the batter in. Bake for 35 minutes or until the batter stabilized. Can be served with a scoop of greek yogurt.

Note:

You can easily make it vegan with a flax egg

If your kids will eat it, I would definitely add a 1/4 cup of pecans or crushed cashews (my son wouldn’t touch it if he’ll see pecans in itπŸ™„)

You can replace the apple with bananas, then I would drop the maple syrup completely and add a tablespoon of unsalted almond butter/Nutzzo butter (omg, pls tell me you know what Nattzu is!)
